Position Overview
As a Sushiman at Enjoy Restaurants Group, you are a specialist responsible for the preparation and execution of sushi and Japanese-inspired dishes, ensuring the highest standards of quality, precision and presentation.
You play a key role in maintaining consistency, respecting product integrity and delivering a refined culinary experience aligned with the concept of the restaurant.
This position requires technical expertise, discipline and the ability to perform in a fast-paced, high-volume environment.
Key Responsibilities
Sushi Preparation & Execution
Prepare sushi, sashimi and other Japanese dishes according to established recipes and standards.
Ensure precision in cutting techniques, rice preparation and product handling.
Maintain consistency in presentation, portioning and flavor.
Execute mise en place efficiently to support smooth service.
Ensure all dishes leaving your station meet quality standards.
Product Quality & Handling
Handle fish and seafood with the highest level of care and respect for product quality.
Ensure proper storage, rotation and freshness of all ingredients.
Monitor product quality daily and report any inconsistencies.
Maintain strict control over temperature and hygiene conditions.
Operational Performance
Manage your station efficiently during high-demand service periods.
Maintain cleanliness, organization and readiness of your workspace.
Coordinate with the kitchen team to ensure service timing and flow.
Support stock control and minimize waste through disciplined execution.
Hygiene, Safety & Compliance
Follow strict food safety and hygiene regulations, especially regarding raw fish handling.
Ensure compliance with all health and safety protocols.
Maintain a clean and organized sushi station at all times.
Team Collaboration
Work closely with the kitchen brigade and management team.
Maintain clear and professional communication during service.
Support overall kitchen operations when required.
Profile Requirements
Proven experience as a Sushiman or in Japanese cuisine.
Strong knowledge of sushi preparation, knife skills and fish handling.
High attention to detail and commitment to quality.
Ability to work efficiently under pressure.
Organized, disciplined and team-oriented mindset.
Knowledge of food safety standards related to raw products.
Physical Requirements
Ability to stand for extended periods during service.
Ability to work in a fast-paced kitchen environment.
Precision and dexterity in handling tools and ingredients.
